A specialty from G\u00f6rlitz \u2013 Silesian Poppy-Seed Cake<\/h4>\n

For the dough:<\/p>\n

500 g flour
\n125 g butter
\n50 g sugar
\n2 egg yolks
\n125 ml milk
\n1 tsp lemon peel (grated)
\n30 g yeast<\/p>\n

For the filling:<\/p>\n

250 g poppy seeds (ground)
\n125 g butter
\n125 g nuts
\n125 g almonds (chopped)
\n200 g honey
\n3 eggs
\n125 raisins (soaked in rum)
\n1 lemon (peel and juice)<\/p>\n

For the crumble:
\n300 g flour
\n220 g butter
\n1 tsp cinnamon
\n1 pinch salt<\/p>\n

To make the dough put flour in a bowl, add butter in small pieces along the side, make a pit in the flour, pour in lukewarm milk, mix with yeast and sugar, add the egg yolks and knead thoroughly. Leave to proof for an hour.
\nCarefully mix the ingredients for the filling in a bowl, leave for an hour.
\nFor the crumble put the ingredients into a bowl, rub together between your hands until you get a crumbly dough.
\nQuickly work the yeast dough again, roll out and put on a backing tray. Leave to proof again for 30 minutes.
\nSpread the poppy seed filling evenly on the dough, cover evenly with the crumble.
\nBake for 30 \u2013 40 minutes at 180 \u00b0C and leave in the oven to cool, if possible over night.
